For that reason, a new study from the University of Massachusetts Medical School has discovered a group of chemicals in the blood that can increase the strength and efficiency of a human brain. In this study, researchers found that after people eat certain foods — like apples, bananas, and oranges — the release of a compound called beta-carboline is increased and this is linked to a higher concentration of beta-carotene in the blood.
The study findings were published online in the Journal of Neurochemistry by neuroscientist and first author Sébastien Brouillon, PhD. Brouillon and his colleagues conducted their study in rats that eat different types of fruit. As they found, after eating apples, rats can produce higher levels of beta-Caroline in their blood because their brain is able to use the chemicals as signals.
